Farina arsa “burnt flour” pasta comes from a little-known Pugliese tradition from the times when local nobles allowed local peasants to glean from fi elds after the wheat harvest.

Since the fields had already been burned clean, gleaners found lots of blackened grains, which they were forced to incorporate into their poor-man’s orecchiette.
